Red Sinigang


Sinigang is a Filipino soup dish with a sour and savory flavor. The traditional Sinigang is tamarind- based but each region usually has there own twist when it comes to the dish. Some use either guava, calamansi or unripe mango.

This Sinigang recipe is not your conventional Sinigang. Red Sinigang is cooked with fried pork and tomato sauce, it surely is more savory than the traditional one. If you love Sinigang and want to try out something new, this recipe will make up for it.
RED SINIGANG RECIPE
Serves 4 to 6 persons
Prep time:30 to 40 minutes

INGREDIENTS:

1 cup cooking oil 
1/2 kilo pork (choose parts that have fats, you can also use beef)
1 tbs. chopped garlic
1 liter pork broth (beef broth if you used beef)
1 medium sized onion, sliced
2 medium sized tomato, quarterly sliced
1 cup tomato sauce
1 small radish, thinly sliced
a bunch of string beans, cut into 3 inches each
a bunch of okra, sliced diagonal
1 eggplant, sliced diagonal
a bunch of petchay
2 green chilies (long chilies) 
1 small pack tamarind soup base powder or 50g tamarind
1 tsp. black pepper
1 tsp. salt

PROCEDURE:
1. On a heated pan, add a cup of oil and fry the pork until it turns brown, once the pork is fried, set aside and remove the oil from the pan.
2. Stir fry the garlic and pork, by stir frying it, the pork will absorb the flavor of garlic.
3. Pour the pork broth, add the onion, tomato and tomato sauce. Let it simmer.
4. Add the radish and string beans, let it simmer for about 2 minutes.
5. At this point, you can adjust the seasoning of the soup, based on your taste preference. You can either just add salt and pepper or a bit of fish sauce. Give it a stir and let it simmer.
6. Add the okra. eggplant, petchay and chilies. Stir and let it simmer for a bit then it's ready to be served.
