Ginseng Chicken Soup


Want to eat something that can boost your health? How about trying Ginseng Chicken Soup? For some of my folks here in the Philippines any food or drinks that has ginseng might not be that appetizing but on the brighter side, GINSENG, has a lot of health benefits. The soup itself does not have a strong taste but it has a mild medicinal taste, it may taste bland for some but the best way to enjoy it is by adding a sesame - salt mixture directly to the soup or dipping the chicken to a vinegar mixture. 

Ginseng Chicken Soup is dubbed as an cure-all dish since each of its ingredients has a variety of medicinal properties. Some of its health benefits are:
  • Boosts the immune system
  • It lowers the blood sugar and cholesterol levels
  • Reduces stress hormones
  • Rejuvenates the body and mind
  • Detoxifies the body
  • Protects the lungs and prevents respiratory ailments
  • Treats diabetes
  • It has anti carcinogenic properties

GINSENG CHICKEN SOUP RECIPE

Prep time: 5 min.
Cooking Time: 45 min.
Serves: 2 persons

INGREDIENTS:

SOUP:

  • Water, 1 liter
  • Leeks, 2 stalks
  • Garlic, 5-6 cloves, lightly smashed
  • Korean Ginseng Pack (use half amount of ginseng and jujube, if you're cooking a whole chicken use the whole pack)
  • Chicken, 300g, fats removed (Traditionally, small sized whole chicken is used for the dish)

PROCEDURE:

Soup:

On a medium-sized pot, pour in water and then add in all the ingredients for the soup, let it boil for 30 to 45 minutes and then you're done! Garnish it with some of the ginseng and green onions.


Once the soup is served, if you want more flavor, you can either dip it into the condiments or add the condiment to your soup.

To make the condiments, mix the following:

Salt Mixture:
  • Salt 
  • Pepper
  • Roasted Sesame seeds
Vinegar Mixture:
  • Cane Vinegar
  • Light SoySauce
  • Green Onion, chopped
  • Ginger
  • Gochugaru
  • Sesame Oil
